The only dal I make now

One pot, pantry ingredients, done in 40 minutes. Freezes perfectly.

Ingredients

  • 300g red lentils, rinsed
  • 1 onion, diced
  • 4 garlic cloves, sliced
  • 1 tbsp ginger, grated
  • 1 tsp turmeric, 1 tsp cumin, 1 tsp coriander
  • 1 tin coconut milk
  • 700ml water or stock
  • Butter or ghee for the finish

Method

  1. Soften the onion in oil, then add garlic and ginger for two minutes.
  2. Add the dry spices and stir for 30 seconds until they smell like something.
  3. Add lentils, coconut milk and water. Simmer 25 minutes, stirring now and then.
  4. Whisk it hard at the end — it goes from grainy to silky in about 20 seconds.
  5. Finish with a knob of butter and a lot of salt.
